Apple Cinnamon Quinoa Breakfast Casserole

Ingredients

  • 1 cup quinoa (not cooked, rinsed and drained
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 apple diced in small pieces
  • 2 eggs (or egg replacer if needed - apple sauce or chia seeds make excellent replacements)
  • 2 cups preferred milk
  • 1/4 cup maple syrup

Directions

  1. Pre-heat oven to 350 degrees.
  2. In a medium sized bowl, mix the quinoa, cinnamon and nutmeg.
  3. Pour into a greased baking dish
  4. Spread the diced apples on top
  5. Using same bowl, whisk eggs, milk, and syrup together.
  6. Pour over apples and quinoa, stirring slightly to ensure the egg mixture spreads evenly and covers the apples.
  7. Bake for about 1 hour. There should still be a little bit of liquid after this time.
  8. Let cool and cut or place in the refrigerator for later use.
  9. Top with your choice of toppings such as yogurt, dried fruits, seeds, and more!
